My first attempt at food blogging..Roasted Rosemary Chicken with Sweet Potatoes

I’m considering turning this thing from a regular blog, to a food blog. I’ve never even blogged before, let alone about food with pictures and recipes, so bare with me. Lately I have been obsessing over this great food blog I found that is right up my alley. BrokeAss Gourmet is an AMAZING blog with delicious, somewhat easy, and cheap (score!) recipes. In my mind, Gabi Moskowitz’s (the writer/cook of BrokeAss gourmet)is a god. So here is my first attempt, but I’m not making any promises!
Ingredients
2 chicken legs, skin intact (I recommend high quality organic chicken. It really makes a difference!)
salt and pepper
3 tbs extra virgin olive oil
3 cloves chopped garlic
leaves from 2 twigs of fresh rosemary, chopped roughly
1 lemon, zested and sliced
3 medium sweet potatoes, chopped with skin intact
1 red onion, quarted
Lets get cookin..
Preheat oven to 350 degrees F.
Liberally season chicken all over with salt and pepper. Transfer to a large baking dish.
In small bowl combine olive oil, rosemary, garlic, and lemon zest. Stir to combine.
Rub chicken legs all over the flesh and skin with oil mixture. Tuck a few pieces of lemon between the flesh and skin, as well as on top of the skin. (the more the merrier!)
Place sweet potatoes and onions in a medium sized bowl. Drizzle with olive oil, season with salt and pepper and toss to coat. Arrange in pan around chicken.
Cover the pan tightly with aluminum foil and roast, covered for 30 minutes. Remove foil and cook for 18-22 more minutes, or until skin is brown. Serve immediately!
I served the chicken and potatoes with steamed green beans and Dave’s families spinach and dried cranberry salad.
